When I was a kid growing up, dinners usually consisted of us sitting down at the dinner table and eating something I particularly didn't care for (for some strange reason, I was not a particular fan of green beans and peas). However, about once every month or so, my mom would surprise us with one of my favorite meals: tacos. I can still see her at the stove, browning the meat and then adding the seasoning. We didn't have a lot of money then, so instead of shredding cheddar cheese, she would take American cheese and chop it into tiny pieces, which she would place on each taco. That was over thirty years ago, but I remember it as though it were yesterday.

Now, why would I bore you with my memories of the past? Well, now that I'm a dad, I want to try and make some memories for my own children, so why not add a taco night to the memory vault? For the past several years, I have made it a point to have a taco night once every few weeks. We all like our tacos different, so while I'm cooking the meat, the rest of the family is getting the fixings ready for the main event. Once everything is ready, each person grabs their shells and loads them up on their favorite toppings. Not only does this get everyone involved in preparing the dinner, it also means less work for me (just don't tell them I said that).
